Recipes from the Pit
This Grilled Pineapple recipe is a favourite in my household and I am sure it will be for you too. If you really want to
make this a treat for your family try grilling it over charcoal as it adds a wonderful hint of smoke to the finished product.
1 Pineapple, peeled and quartered lengthwise or cut into rings
1 Cup of Canadian Maple Syrup
1 tsp of fresh ground cinnamon
½ tsp of fresh ground cloves
½ tsp of fresh ground nutmeg
1) peel and core your pineapple and slice how you would like. If you are doing slices they will need to be cored and this can be very easy to cut yourself. If you are doing slices cut them lengthwise and core them after cutting. Place your pineapple in a ziplock baggie. Add all remaining ingredients and let marinate for 1-24 hours. The longer the better.
2) Heat your grill to medium high.
3) Place pineapple on your grill until nicely brown on all sides. Turn every 2-3 minutes watching carefully not to burn the pineapple.
4) Serve as an appetizer or as a dessert over vanilla ice cream and use the remaining marinade to drizzle over the finished product.
Try using other spices and flavourings in the maple syrup mixture. Adding a small touch of vanilla extract, or rum adds a wonderful change to the flavour. Don't be afraid to experiment; remember a recipe is just a guide line to your BBQ or Grilling world.
